St. John's Stew


  • 1 large onion, cut into big chunks
  • 2 T. olive oil
  • 2 cans garbanzo beans, drained
  • 1 can diced tomatoes with their liquid
  • 1 can tomato sauce
  • 1 can small black olives, drained and left whole
  • 1 T. dried basil
  • salt and pepper to taste

Saute onions in olive oil until browned. Add remaining ingredients and heat through. Excellent the next day. Can be doubled or tripled.
