Vegetarian chili
(a slow cooker recipe)
Serves 8-10
Ingredients
- 2 TBS olive oil
- 2 c. celery, chopped
- 1 green or red pepper, seeded & chopped
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 2 – 28 oz. cans stewed tomatoes
- 2 – 16 oz. cans kidney beans, undrained
- 1 ½ - 2 c. raisins
- ¼ c. wine vinegar
- 1 TBS. parsley, chopped (1 tsp. dry)
- 2 tsp. salt
- 2 tsp. oregano
- 2 tsp. cumin
- ¼ tsp. pepper
- ¼ - ½ tsp. hot sauce (optional)
- 1 bay leaf
Directions
- Combine all ingredients in slow cooker.
- Cover. Simmer on low for 8 hours.
Voila! Great with bread.
