Vegetarian chili

(a slow cooker recipe)

Serves 8-10

Ingredients

  • 2 TBS olive oil
  • 2 c. celery, chopped
  • 1 green or red pepper, seeded & chopped
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 – 28 oz. cans stewed tomatoes
  • 2 – 16 oz. cans kidney beans, undrained
  • 1 ½ - 2 c. raisins
  • ¼ c. wine vinegar
  • 1 TBS. parsley, chopped (1 tsp. dry)
  • 2 tsp. salt
  • 2 tsp. oregano
  • 2 tsp. cumin
  • ¼ tsp. pepper
  • ¼ - ½ tsp. hot sauce (optional)
  • 1 bay leaf

Directions

  1. Combine all ingredients in slow cooker.
  2. Cover. Simmer on low for 8 hours.

Voila! Great with bread.
