Creamy mushroom soup
Ingredients
- 1 tbsp. oil
- 1 yellow onion ,diced
- 6-8 cloves garlic, minced
- 2 lbs. cremini mushrooms, diced
- 8 cups vegetable broth
- 2 tsp. thyme
- 1/2 tsp. rosemary
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 can full fat coconut milk
Directions
Sauté onion and garlic in a large pot over medium heat until the onion turns translucent. Add the mushrooms, cook until they release their water and are soft. Add the spices and cook for an additional minute. Pour vegetable broth and coconut milk in and bring to a simmer. Cook for 15 minutes. Blend with immersion blender or upright blender and serve!
