St. John's stew
Ingredients
- 1 large onion, cut into big chunks
- 2 T. olive oil
- 2 cans garbanzo beans, drained
- 1 can diced tomatoes with their liquid
- 1 can tomato sauce
- 1 can small black olives, drained and left whole
- 1 T. dried basil
- salt and pepper to taste
Directions
Saute onions in olive oil until browned. Add remaining ingredients and heat through. Excellent the next day. Can be doubled or tripled.
